Pouillon’s "Le Montgruguet" comes from the hilltop above Les Goisses, near the Notre Dame du Gruguet, where all topsoil has eroded away leaving a pure chalk island along the banks of the Marne. This cuvée is a blend of 100% Pinot Noir from two microparcels on this hilltop: La Croix Blanche and Varille. It is vinified and aged for 18 months in neutral barrel before bottling, then aged sur lattes for 36+ months. The resulting Champagne is incredibly textural and rich with strong savory flavors. It has an incredibly long finish that will keep you coming back for more.
