Premier Cru Les Combes sits opposite En Remilly, and is steps away from Chevalier-Montrachet. This cooler, east-facing vineyard allows for a wine with intense minerality with great acidity that is well balanced. The vines here average over 50 years old, planted on clay topsoil with limestone substrate. Grapes are hand-harvested, whole-cluster pressed, cold-stabilized and then fermented. They are then aged 12 months in barrel (only 15% new) and then aged an additional six months in stainless steel tanks.
