Guyot, Raphaelle 2024 Calliope VDF

Notes from Becky Wasserman & Co. - Chardonnay from two plots in the Mâconnais and northern Beaujolais. Purchased as grapes, directly pressed, lightly decanted, ambient yeast fermentation, aged for 6 months in tank, lightly filtered, minimal SO2 added after pressing and before bottling (15-30 ppm total SO2 at bottling).
