This is the second iteration of Bethany's vermouth, made using Gamay from the Björnson Vineyard as a base wine and fortified with distilled Pinot Noir grapes. The herbs and botanicals are for the most part locally foraged or sourced from friends in Oregon and Washington, making this a uniquely Pacific Northwest Vermouth. It's a bright and lifted style, with cooling herbs mingling with some woodsy spice and bitter wormwood to contrast the subtle cherry sweetness. Overall on the dryer side of sweet vermouths, this is delicious on its own or would make a delightful spritz with club soda and a slice of orange.
