"In March 2021, Hermógenes returned to the black and red earth stretch of his “El Llano” parcel for the harvest of approximately seven tons of quiotudo Espadín that were dedicated to this batch. These piñas of capón magueyes were grown alongside multiple species of agave, and amongst the family’s annual plantings of corn, beans, and squash. The flavors and aromas present are a reflection of the convergence of the tools and the specific process, the lands and the water, and of course, the knowledge and experience of the maestro palenquero."
