A blend of Côt, Cabernet Franc, Gamay that the Delecheneaus call "la vraie gourmandise (ad libitum en latin dans le texte)." They look for a straightforward expression of fruit from the three varieties. Maceration is not short at 18 days, as they are looking for "volupté" or voluptiousness. They recommend with red meat, grilled poultry, charcuterie and Mediterranean cuisine. The fruit profile is red and black fruits, but overall it's a juicy and satisfying red that is not too light or too heavy. Enjoy with a light chill.
