Nicolas (Nico) Carmaran is a whimsical farmer/vigneron who produces fun and fascinating wines in the Aveyron, a small region in southern France. Minimus is a bottling that Nico makes as a little sibling to his "Maximus" cuvée, always focused on the fresher and lighter-bodied side of Fer Servadou. The 2025 is all Fer Servadou, really fresh and juicy with delicate acidity, made with partial carbonic maceration a la Beaujolais.
