A touch darker fruited than the straight Nero'Avola with a more pronounced savory, earthy quality. Shiso and black pepper in the finish.
The fruit comes from all three vineyards (Niscia, Forfice, and Pruvuletta) and names after Paolo's son, Emanuele. Pre-historic marine dunes approximately 8 meters deep above limestone bedrock which was a formed seabed. Mostly steel aging, with a portion of the Nero seeing wood.
