Passetoutgrain Excellence - Chevillon, d'Angerville, and Lafarge
11/17/25 -
The world of high end Burgundy can often feel quite daunting, it sure did for me when I first entered the wine industry. What producers are the best? Which vineyard is better than another? Is the wine worth its price? When should I drink it? All of these are questions that I often ask myself, and that we get quite frequently at the shop. Today I can state with complete assurance that yes, these are some of the top producers in Burgundy. Yes, they are amazing values, and you can enjoy them now over the holidays or wait 3-4 years.
To backtrack a little, today I have comprised what I believe to be three of the best Passetoutgrains available. Passetoutgrain is the only appellation in Burgundy that allows for the blending of grapes. Specifically it must be Gamay and Pinot Noir with Pinot Noir making up at least 30% of the blend. The word itself means "toss it all in" and refers from the traditional practice of co-fermenting different grape varietals from the same vineyard. Today the wines can be co-fermented or blended later in the winemaking practice.
Offered today are what I believe to be some of, if not the best three Passetoutgrains on the market. Outside this category, Chevillon, d'Angerville, and Lafarge are all considered to be benchmark producers for their respective villages and their high end wines can go for a extremely high prices, but today all wines are $65 or less (excluding 1 magnum) so there are excellent values to be had here!
