Clos Cibonne 2024s, In-Store Tastings and a very important Save the Date: CSW's 25th Anniversary Banquet!

There's no denying that the plight of the independent wine retailer is a challenging one. Here at Chambers Street Wines, we feel a shared struggle with friends in the industry all across the country who are doing what they can to survive. For us, walk-in business is not as boisterous now as it used to be in pre-Covid Tribeca, so we've relied more and more on our newsletter offers. Though Sundays have not historically been a day for offers, my humble father and our co-founder, David Lillie, has remarked at times that other reputable retailers send emails on Sundays... so why not us!? With this in mind, we will start to send out occasional Sunday offers, but we'll focus on one or two wines, a fun deal we discovered or some kind of casual click-if-you-want offering. Worry not, there will be no private collections on a Sunday! 
 
Today, we have a few items on our agenda. First, the arrival of Spring and 2024s from Clos Cibonne, your favorite wine-geek's favorite rosé. On offer and available this coming week is their flagship 'Tradition' bottling, along with the more rare 'Cuvée Spéciale des Vignettes.' Secondly, a reminder of our in-store tastings, which happen every Thursday from 5-7pm. 
 
-This coming Thursday, 4/16, we host Julian from Terrestrial Wine Co., who will be pouring an exciting lineup in honor of their 5th Anniversary (Congratulations!). 
 
-Thursday, 4/23, we host Billy from T Edwards Wine, who we will likely convince to open some L'Enclos Chablis, Roberto Henriquez, and other tasty bottles.

Finally, we have a very special Save the Date - Chambers Street Wines will celebrate our 25 year Anniversary on Saturday, June 6th! Details will be announced very soon, but we wanted to make sure that anyone interested in attending at least had a heads up on the date. Believe it or not, we opened our doors at 160 Chambers Street (our first of three locations) on June 1st, 2001. Now celebrating our 25th year, we are very happy to be in our new home at 79 Chambers Street, across the street from Chambers restaurant and Freddy's wine bar. We can't wait to celebrate 25 years of CSW! Stay tuned for more details coming soon.

Clos Cibonne

This is a historic estate in the Côtes de Provence, famous for producing rosés aged an additional year under a veil of surface yeast called “fleurette.” Like an unconventional, French answer to the long-aged rosés of Lopez de Heredia, the rosés of Clos Cibonne offer a savory, spiciness on the nose and full, silken texture on the palate that is unique and transcendent of the category. The wines are based on the rare local grape variety, Tibouren, which Clos Cibonne has championed since the early 20th century when André Roux brought the estate to prominence and replanted Mourvèdre vines with Tibouren. Clos Cibonne is a 15 hectare estate about 800 meters from the Mediterranean. The soil is schist and the location of the vines, in a depression surrounded by hills, means an advantageous wind pattern cools them, offering relief from the scorching Provencal sun. The estate is now owned and run by André Roux’s granddaughter, Brigitte and her husband, Claude Deforge. Cibonne is farmed organically.
 
For the most part, Clos Cibonne is planted to Tibouren, a vine that produces sweet and thin skinned grapes of uneven sizes that also ripen unevenly. In fact, some unripe grapes are left in the press to add spice and acidity to the resultant wine. Cibonne makes both an old vine and a young vine Tibouren Rosé; both are fermented in stainless steel before going into 100-year-old 1,000 liter foudres for their maturation.
