Bistro Louis Severine 2024 Chrysalis

This is a collaboration with Christian Binner - a delicious blend of Sylvaner, Pinot Noir and Muscat Ottonel, co-macerated with whole clusters for seven days before being basket pressed and aged in a single old barrel. No added sulfur, unfined and unfiltered, gravity bottled in July 2024. It drinks somewhere in-between a skin-contact wine and a light red, a light salmon pink in the glass and a combination of peach fruit and subtle floral aromatics. It's juicy and fresh with soft tannins and vibrant acid. A delicious textural wine, only one barrel made each year.
