Parcellaires de Saulx 2020 Chambolle Musigny
Les Parcellaires de Saulx is a micro-negociant founded in 2017. At the healm is cellar master Isabelle Laurend who sources grapes strictly from farmers who work organically or biodynamically. Every single wine is made from a single parcel, and in the cellar there is no new oak used. Most cuvees only produce a single barrel of wine. The 2020 Chambolle Musigny comes from a plot on clay-limestone soils and is as smooth as can be. The wine was aged 12-15 months in barrel and has now had some time to relax in the bottle. It shows the elegance of Chambolle with some structure that will allow for continuous aging if you wanted. Truly a fresh and pure wine that would be delicious with poultry, especially duck.
