Grape Ink 2021 Days Until Harvest Pinot Noir
This is a light but deeply mineral Pinot Noir from the northernmost part of the Willamette Valley. Grapes are hand-harvested and placed in open-top neutral barrels and tubs where a long, slow fermentation occurs. After 10-30 days (depending on the vintage) of contact with the skins, stems and seeds, the wine is put to rest in neutral barrels. The wine ages on the lees for 18 months in a cave in Oregon’s coastal mountain range. Bottled unfined and unfiltered with a small amount of SO2 at bottling, this is a light and pure expression of Willamette Pinot that's racy and mineral, with bright cherry fruit and lively acidity. Delicious at cellar temp with grilled meats or vegetables.
