Lés-a-Lés Medieval de Ourém 2022 Encostas d'Aire Palhete
Lés-a-Lés’ Medieval de Ourem is a wine with a very particular history. Monks from the Cistercian order passed down the recipe over many centuries, and if this recipe is followed exactly, then the wine can be given the DOC Medieval de Ourem. In approach and style it's very similar to the Cuvee 910 from Vignes du Maynes, which also likens itself to wines made in the year 910 by the monks at the Abbey of Cruzille. The "Medieval" consists of mostly Fernão Pires (white) and Trincadeira (red) grapes from vineyards that the Cistercian order planted to both white and red varieties. The Fernão Pires grapes macerate for 24 hours and are then transferred to 500 liter barrels, where only 80% of the volume is filled. When the fermentation of the white must is almost complete, the empty space in the barrel is filled with the Trincadeira grapes, which are macerated and fermented for 48 hours. Fermentation is carried out with indigenous yeasts and without the use of any added SO2. It is aged in lees for 3 months. Since it is blend of red and white grapes there are interesting notes throughout, adding a level of depth and freshness. Serve with a light chill!
