Garcia, Esmeralda 2022 Vallejo

Importer note from MFW Wine: Vallejo comes from vineyards that have managed to survive for centuries within the city, planted among the buildings of Santiuste, in an urban environment, protected by the houses of Vallejo. The urban area is hotter and less windy, creating warmer, robust wines with a mineral core. Fermentation with indigenous yeasts, in 500 liter dolia (Spanish clay amphora). After fermentation the wine was left to rest on its fine lees for six months in dolia, and then bottled without fining or filtration. No sulfites were added at any point.
