A beautiful moelleux Chenin Blanc, from our friends Lise and Bertrand Jousset in Montlouis. The vines are 60 to 80 years old, on sand and silex soils over limestone giving tiny yields for the Sur le Fil of 15 hl/ha.  Wild yeast fermentation, aging in 1 and 2 year-old barriques. 60 grams/liter RS. This beautiful moelleux shows a bright gold color and gorgeous honeyed aromas of exotic and yellow fruits, earth and minerals. The palate is fresh and creamy with beautifully ripe yellow fruits, citrus and minerals, beautifully balanced, supple and elegant, finishing with a great expression of the soils of Montlouis. Open a few hours in advance or carafe, best after 5 to 10 years of cellaring, but incredibly delicious now. Serve as an apéritif or with foie gras, blanquette de veau, poularde aux girolles (dans quelques années), fromage à pâte persillée, Bleu de Laqueuille, soupe de fruits d’été, tarte fine aux poires ou tatin.
