Wine Dinners at Chambers with Pascaline Lepeltier Sept 26 and Oct 9th!

On Thursday 26th of September at 7pm, we are very happy to welcome to Chambers Restaurant at 94 Chambers Street, Ian Tattersall (pictured above with friend) one of the world's most celebrated anthropologists. Curator Emeritus of the American Museum of Natural History in NY, Ian is a paleoanthropologist focusing his current work on the human acquisition of symbolic style of consciousness (in his words ‘how people acquired their unprecedented symbolic style of consciousness, the feature that makes us humans feel so different from all other living things). But he is also an exceptional wine connoisseur, who co-authored with the microbiologist Rob DeSalle three essential books about fermented beverages : A Natural History of Wine, A Natural History of Beer, and Distilled: A Natural History of Spirits. And he is a dear friend of the restaurant. So he accepted to curate a dinner based on his incredible journey all over the world exploring the history of Homo Sapiens, and frequently studying the original sites where wine, beer and spirits started to be made by humanity.

We will travel from Armenia and Georgia to Greece and South Africa to Vietnam and the US to understand this remarkable cohabitation between mankind, agriculteurs and microbiomes! It will be a rare, fantastic night of exchange and taste with one of the most brilliant, humanist minds in town and beyond!

The wines will be paired with a delicious 4-course menu from chef Jon Karis and his team.

[Domaine Belargus "Coteau des Treilles"]

On Tuesday October 9th, join Ivan Massonat for a unique dinner presenting Domaine Belargus, a wine lover's dream come true, in the historical heart of the Loire Valley.

At the origin of the project: the vision of Ivan, a passionate wine enthusiast, determined to restore the prestige of a thousand-year-old wine region... After years of searching for “diamonds in the rough,” he fell in love with Anjou and its landscapes, miraculously preserved through time. Thanks to a few decisive encounters (in particular, that of legendary winemaker Jo Pithon) and a true "alignment of planets," Ivan built stone by stone a vineyard of twenty hectares, mainly located on hillsides. Chenin Blanc, grown biodynamically, is the sole "instrument" at Domaine Belargus, allowing each plot to be interpreted with precision.

Planted on a geological chaos where a multitude of soils can be found (schists, volcanic rocks, puddingstones, aeolian sands, etc.), Domaine Belargus explores the micro-terroirs of Anjou Noir through a parcel-based approach inspired by the "climats" of Burgundy. Respecting the personality of each vintage, the Domaine produces ten cuvées of dry white wines and practices long aging (up to three years in large wooden casks, on total lees). In the years when Mother Nature allows it, the magic of botrytis allows the Domaine to create a few cuvées of sweet wines... to celebrate the great legend of Anjou wines.

The Domaine takes its name from an endemic blue butterfly, the Belargus, in homage to the beauty and fragility of Nature.
