Kelley Fox Vermouth
This is a unique vermouth which came about as a collaboration of sorts between Kelley, her friend and co-collaborator Stephanie Sprinkle, and distiller Lynsee Sardell of Big Wild Spirits. First some of Kelley's 2020 Maresh Pinot was distilled by Lynsee into a brandy, of which only the hearts were used to macerate the herbs/botanicals/spices and eventually fortify the base wine. Over 35 plants were selected and prepared by Stephanie, including wormwood, rose, elderflower, angelica, chamomile, mugwort, hyssop, and lemon balm. Many of these were grown locally and each was selected for its particular attributes brought to the final product. The base wine is Pinot Noir from Freedom Hill, Canary Hill and Maresh vineyards, all from the 2020 vintage. This is a harmonious and ethereal vermouth that is best consumed as you would a wine - on its own, with a slight chill either as an aperitif or digestif.
