Chateau D'Arlay 2016 Vin Jaune

This exquisite Vin Jaune comes from low-yielding Savagnin vines planted between 1953 and 1974. It spends 6.5 years sous voile, developing layers of complexity before being bottled. The nose is nutty with some oxidative notes but ultimately lifted and remarkably fresh. It shows great density but remains linear and lithe on the palate, with a salty mineral core and a finish that goes on forever. A profound, ethereal wine that will age as long as any of us, obviously an ideal pairing with aged comté but perfectly enjoyable on its own.
