The Salvatore Marino "Turi" Bianco is produced in the renowned “Contrada Buonivini” near Pachino. Catarratto is one of the few autochthonous white varieties that has always been cultivated in Pachino. It is known locally as "Mantiddatu" (Mantle).("Turi" is the local way of saying Salvatore in Sicily.) The inspiration for the labels comes from Futurism, an Italian literary, artistic and musical movement of the beginning of the 20th century. The bianco label depicts the muscular red arm of a worker (worker in the vineyard), which raises a simple (tavern) glass of wine, the same one where our grandparents drank (none of them ever had wine glasses).  The grapes are destemmed, macerated for five days then ferment with indigenous yeasts in stainless steel tanks. After malolactic fermentation, the wine is decanted and racked off its gross lees. It then ages in concrete until its bottled the spring following harvest.
