The Wolf's Paw - Great Chablis from Thomas Pico!

Thomas Pico of Domaine Patte Loup (The Wolf’s Paw in French) is the next name for Chablis buffs to note. He inherited 2.4 hectares of high elevation Chablis vines in 2005, and promptly decided to rebel against his family’s tradition of high yields and machine harvesting. He now tends the vines and makes the wines in a manner similar to his neighbors, Alice and Olivier de Moor, with natural yeast fermenttions, hand harvesting, and strict sorting. Fermentations are split between concrete eggs and stainless steel, allowing the wines precise minerality and zesty fruit flavors to show unhindered. We have only five cases of this wine to sell, and expect high demand once drinkers start pulling their corks. And while you're thianking of naturally made Chablis, make sure to peruse our selection of wonderful 2008's and a couple of '09s from Alice and Olivier.  JR
