This slender volume, about 50 pages of translated text, is a fascinating glimpse into the thoughts of Jules Chauvet which influenced so many winemakers to work in more "natural" ways. "Wine, wine should be naked. I shall go even further; it is the wine without sulphur anhydride (SO2), without sugar, without anything. That is simple! If one wants to look things straight in the face. Because we have the habit of putting sulphur, sugar, oak, etc. How far will we go?"
