Daniel Ramos: Expressive Wines of the Gredos

After discovering the potential of the various terroirs of the Gredos mountains (near Madrid, and home to one of the highest peaks of mainland Spain), Daniel Ramos and his wife Pepi established themselves in the town of El Tiemblo. Daniel Ramos has been making wines there since 2010, and currently owns about 15 hectares of vines in several parcels. 

With a respect for authentic winemaking, Daniel  Ramos aims, through the Zerberos Finca label, at representing the specific terroirs and altitudes/expositions of each of his vineyards.

For his Kpi wines, Daniel Ramos uses traditional Spanish winemaking techniques - clay amphoras, american oak, or concrete tanks - to make wines of character.

His Garnacha vines range from 50- to 100-year-old and are planted on decomposed granitic sand and/or slate schists, on beautiful steep slopes at around 800-950 meters of altitude with different sun expositions.

Daniel Ramos buys his Albillo Real and Sauvignon Blanc grapes from different old vineyards in the region. The grapes come from 30- to 80- year-old vines on granitic sandy soils.

A proponent of less-is-more, Daniel Ramos practices organic farming, and in the cellar, uses native yeast and slow maceration, with no filtering or fining, and with minimal addition of sulfur at bottling, resulting in wines of expression and character. 

The two Zerberos Finca wines that we currently offer show the different terroirs of the Gredos mountain and various personalities of Garnacha. Dair is made with whole-clustered vines planted on schist and aged in old oak for one year. El Altar comes from fully destemmed vines planted on granitic sandy soils and quartz. Two wines with distinct character: one is rustic with spice notes intertwined with floral undertones, while the other is vibrant and fruity with plenty of mineral energy. For the Kpi Rosé, Daniel Ramos uses extended lees contact and american oak to impart complexity and luscious vibes to the wine.   

We are proud to maintain a large selection of Gredos wines here at Chambers Street Wines, demonstrating the great diversity of the region. We still have a few bottles of Comando G's powerful Tumba del Rey Moro, Daniel Landi's spectacular El Reventón, and  Rubén Díaz's full of sun and energy Cuesta del Tejar. RuBor's (Rubén Díaz and Orly Lumbreras' project) SADE is a fun and interesting orange wine with long skin contact and extended maceration and Rubor's reds are gorgeous Garnacha wines representing the various personalities of the Gredos mountain (Pulgadas and Groove). We are happy to continue to offer Bernabeleva's fresh and vibrant Camino de Navaherreros (a great value) and its beautiful Viña Bonita. And don't forget Ruben Diaz' La Sorpresa Saca No. 6 and La Sorpresa, fantastic wines made using the traditional Spanish solera method, better known for sherry and Madeira.

Daniel Ramos Zerberos 2013 Castilla y León Dair

Dair is a 100% Garnacha planted on schist soils in La Chapelle en La Joya de la Movida in the Gredos mountains. Whole-clustered, the grapes are fermented with native yeast, and then aged in old oak for a year with no filtering or fining, and with minimal addition of sulfur. This is a rustic but vibrant Garnacha wine with red berry and cherry fruit, earthy spice, dried herbs and tobacco, and dark rose floral and wooden notes lifted by bright acidity, superb minerality and good tannins. A wine with a lot of character, drink it with a plate of jamón and dried manchego, roasted pork tenderloin, and beef brisket. As a cute note, Dair is the combination of the first two letters of each of Daniel Ramos' children first names (Daniel and Irene). They participated in some parts of the winemaking and drew the labels! Caroline Coursant

Ruben Diaz 2014 Sierra de Gredos Cebreros Cuesta del Tejar Garnacha

Cuesta del Tejar is 100% Garnacha from schistous slopes at 950m altitude in the town of Cebreros, the heart of the Sierra de Gredos, and home to a fascinating variety of terroirs and a corresponding bounty of delicious wines. Aromas of wet, warm stone, earthy licorice, and cassis, with flavors of fresh, ripe blackberries, orange oil, sandalwood, supple, starchy tannins, and bright acidity. Well worth cellaring, but also delicious in its youth, pulsating with the primal energy of the Gredos' wild earth, sun, and air. Bravo to our friend Rubén Díaz, the undisputed master of Cebreros! Ruben Diaz NV Castilla y León Cebreros La Sorpresa Saca No. 6 500ml

The Sorpresa is a long-aged Albillo Real, stored in a small solera started in 2004 when Ruben Diaz found a barrel of 100+ year-old Albillo in a cellar in Cebreros. This ancient Albillo is the base wine of the solera, which he refreshes regularly (though not every year) with young Albillo. Some of the barrels develop a thin layer of flor. He bottles sacas of 200 bottles at a time. Saca #6 was bottled in 2014, pulled from a barrel refreshed in 2004 and 2007. A perfect wine for customers interested in Amontillado or Palo Cortado style sherries. But note that, unlike sherry, Ruben's vinos de tonel are not fortified! Ariana Rolich

RuBor Viticultores 2015 Sierra de Gredos Cebreros SADE Albillo Real

Albillo Real is the great white grape of the Sierra de Gredos, a massive mountain range west of Madrid, where Garnacha reigns supreme. Albillo is expressive, earthy and versatile among styles of wine, from crisp whites to orange wines, to historic sweet and rancio styles. The grapes for SADE come from a single vineyard in Cebreros, picked quite ripe and given a 40-day maceration on the skins, resulting in velvety tannin, flavors of musky apricot, papaya, squash, honeycomb, salty cheese rind, and earthy mineral depth. Terrific with a grilled pork chop, roasted chicken, roasted fish with citrus, earthy root vegetables, cheeses or charcuterie. Ariana Rolich

RuBor Viticultores 2015 Sierra de Gredos Cebreros Groove Garnacha

Groove comes from a unique spot in Cebreros, the highest granitic vineyard in the village,  planted on very sandy soils a 900m to 50-year-old Grenache vines with very low yields of small grapes with thick skins, with electric tannin and acid. This wine consistently throws people off, as it is not fruit-driven.  Groove is intense and distinctly mineral- and acid-driven, with flavors of brambly and herbal wild berry fruit, brilliant acidity, and hints of herbs and coriander. Orly Lumbreras of RuBor is always good for a musical reference! 7 Pulgadas is "seven inches" (as in the vinyl record format), made from a single parcel of Garnacha in Navarrevisca (in the Alto Alberche zone of the Sierra de Gredos), planted on sandy soils of decomposed granite at 1100m altitude. Explosive fragrance of of flowers and spice flow onto the powerful palate of ripe raspberry and tart red plum, black cherry and chewy skins. Bernabeleva 2015 Sierra de Gredos San Martin de Valdeiglesias Viña Bonita

Viña Bonita is an aptly-named Garnacha from an 80+ year-old hilltop vineyard planted on granite in San Martin de Valdeiglesias. A swirl of heady aromas -- cherry blossoms, sweet berries, and rose -- primes the palate for supple and juicy flavors of sappy strawberry, ripe raspberry and  bitter cranberry fruit, flecked with resinous Mediterranean herbs, precise minerality, lift, and length. Daniel Ramos, in the Gredos mountains, makes this 100% Garnacha rosé using the traditional method of making rosado in the region, aging it in American oak for one year with extended lees contact. A flavorful rosé - this wine will reminds you of musky summer nights on an exotic trip. Warm notes of vanilla, cinnamon, wild raspberry, ripe dark cherry, red apple, and American cider mingle with rose water and balsamic undertones. Comando G 2015 Sierra de Gredos Villanueva de Avila Tumba del Rey Moro

Everything about Tumba del Rey Moro vineyard is vertigo-inducing: the treacherous access, the steep 1/2 hectare scrap of rocky granitic mountainside, and the wild, dizzying beauty of the wine itself. 65-year-old vines of Garnacha cling to this site at 1100m in Villanueva de Avila in the Alto Alberche Valley, an area with continental climate, where Garnacha enjoys a long growing season and a very special expression.  Tumba del Rey Moro has subtle aromas of sweet, delicate florals, exotic spice, mountain scrub, and soil, with a long, brisk, sapid palate, laced with shimmering wild berry and ripe wild strawberry fruit, flower petals and mountain air and earth, savory minerals, and with a fine-grained tannin. Ruben Diaz NV Castilla y León Cebreros La Sorpresa Garnacha 500ml

Ruben Diaz is the steward of the ancient tradition in Cebreros of aging red and white wines perpetually in small soleras, tapping them for a few bottles' worth of mature, textured elixirs, called "rancio" or "dorado" wines (some are sweet and some are dry). Diaz has some of the area's oldest examples of these wines and none of them are commercially available, making a tasting from this collection feel akin to a secret museum visit. Thankfully, he has started a number of his own rancio soleras and perpetual cuvees. This one is made from red Garnacha wines from multiple vintages spanning 2006-2013. A sheer, rosy copper hue in the glass, with aromas of hazelnut, orange oil, acetone, and caramel. The senses are bracing for sweetness, but the palate is dry, strong and nuanced, with flavors of dried apricot, raspberry eau de vie, apple skins, sandalwood, dried mediterranean herbs, cacao, and nut skins. Orly Lumbreras 2015 Sierra de Gredos Navaredondill Punto G Garnacha

Orly Lumbreras is doing some terrific work in the Alto Alberche zone of Gredos in Ávila province, an area with powers that are difficult to describe, but are acutely felt in the place and the wines. In Orly's own words: "Be aware with the Ávila side, for me it is much more untamed and with a wild temper. You ask me what this area has that is so special. I would say it has it all. Bernabeleva 2016 Vinos de Madrid Blanco

This wine is a blend of Albillo and Macabeo from 30- to 85- year-old vines, from various parcels in the Gredos mountain, 75 km west of Madrid. The wine is aged on its lees in 500L and 600L French oak barrels. On the nose the wine shows a beautiful bouquet of pear, almond, pineapple core and lemon pie. On the palate, the wine has a creamy texture with vibrant energy and good acidity.
