(2025: 13% alc; 21.8 gr\/l RS; 5.65 gr\/l total acidity) The 2025 Silex Noir shows more restrained aromas than the \"Trois Argiles\" of citrus, white flowers, pear, heirloom apple, mint, hay and earth, very slightly honeyed. The palate is dense and intensely mineral, with subtle white fruits covered by the dense chalky texture finishing with a nice bitter kick of lemon, firm acidity and minerals. Serve now with a grilled fish, goat cheeses, fruit desserts perhaps, but this is a great candidate for the cellar that will really sing with 10 to 30 years of aging.
