Vines are 35-65 years old, and soils are predominantly clay-limestone. Luis makes use of the local co-op's winery to vinify this cuvee. After hand-harvesting, the grapes are destemmed before undergoing fermentation with native yeasts in stainless steel. The wine is then aged 10 months in tinaja (clay amphora).
