After fermenting with native yeasts, three quarters of the wine spends 9 months in 500-liter French oak, the rest in stainless steel for the same amount of time. The 1\/4 in steel undergoes a short maceration with stems and skins, which lends texture without yielding an 'orange' wine. The wine is unfined, unfiltered, and bottled with a minimal addition of sulfur.
