A lovely entry into the world of White Burgundy as it contains the same grape varietal yet cooler temperatures and Kimmeridgian soils, resulting in brighter, more refreshing representations of Chardonnay. To make it even better, they often come at a much more approachable price. Kimmeridgian soils are key to the flavor profile of Chablis, it is a mix of limestone and clay that is rich in marine fossils which lends itself to wines with purity and minerality. Just as with other sub-regions of Burgundy, there is a classification system based off of vineyard designations, beginning with Petit-Chablis, then Chablis, followed by Premier Cru and Grand Cru. Today we focus in just on the wines commonly referred to as “Village Chablis,” vines often found surrounding the Premier and Grand Crus, flanking the Serein River. I truly believe that the wines from Chablis are some of the most crowd pleasing in style, perfect to bridge the gap between the preferences of a large crowd. Tasting this wine this week it had incredible minerality and direction. This will be wonderful alongside a wide array of food, mainly seafood and vegetables. The resulting wine is one of strong minerality, with notes of apple and white florals.
