This is a delicious wine, not overly sweet, with concentrated blackberry and black cherry fruit, that would be perfectly paired with any chocolate desert, candied nuts, or even a strong blue cheese. On it's own, served chilled, it could be a delicate dessert and a nice finish to a meal. After this, the free fun and press juices are blended, and the wine is aged for 6 months in neutral barrels. This is a young wine, showing more predictable tannic structure, albeit refined and integrated. Yields are about 20 Hl\/Ha, harvesting is by hand in small baskets, fermentation (wild yeasts) and aging is in small barrels. Complex aromas of lemon oil, thyme, hay and white fruits—a lovely melange with contributions from each variety and especially showing the Marsanne and Roussanne. The palate is dense, stony and saline with herbal, citrus, almond and white fruit flavors. The finish is long with mineral acids and white fruits that linger on the palate. Complex, refreshing and distinctive as a young wine, this will accompany grilled fish and any light cuisine, and is crisp and delicious by itself. Really a Grand Cru of the Roussillon and a great value!
