Brin de Chèvre (\"goat's hay\") comes from two neighboring parcels, one planted in 1937 and the other in 1950; currently, those original old vines make up about 70% of the wine, with the rest from massale-selection replantings from over the last decade or two. The Puzelats farm the vineyard organically and with horse and plow to avoid damage to the very old vines. The vines are planted on sticky clay-flint soil and have a cold, windy exposure. Harvest here is often the latest of all Tue-Boeuf vineyards. La Butte or \"the hill\" is a small parcel of old vines (around 90 years old) in the Touraine appellation. A small percentage of the fruit is of the teinturier type, distinguished by its red flesh, which adds deep color and flavor to this wine. Typical of Tue-Boeuf reds, the fruit goes as whole clusters into huge oak vats for a spontaneous fermentation, which is a semi-carbonic maceration with a closed top for around 10 to 14 days. The clusters are pressed and the wine finishes with a non-carbonic, open top fermentation in vat. La Butte is aged for about 8 months in used Burgundy barrels; it is bottled without fining or filtration and with little to no sulfur. This lovely Gamay always shows beautiful fruit and great balance and brightness, with raspberry with floral notes, lifted by refreshing acidity. Tue Boeuf has been sourcing from this site known as Petit Buisson on the north bank of the Cher since 2003. It is an organically farmed, hand-harvested, 1.4-hectare parcel of 40-45 year-old vines on flinty clay-limestone soils, considered the little cousin to their \"Buisson Pouilleux\" cuvée. Fermentation with wild yeasts of course and aging in used burgudy barrels. Vibrant pear and melon fruit, very supple and ripe but with firm acidity. Most Sancerres are dulled by excess sulfur-dioxide, but this wine is pure, long and delicious with only a tiny addition of SO2 before bottling.
