He would disappear into the cellars and come back with something wonderful - once it was a Jurançon that was indescribably delicious, another time a Burgundy from a much-maligned vintage (1980) that was, of course, sensational. Somewhat in the spirit of Monsieur Besse, we always throw a few bottles on the racks downstairs to sell later, so here's the 2023 offer of forgotten treasures, leftovers and held wines, in the hopes that you may find something special. Organic farming, wild-yeast fermentation, aging in 5 to 10 year-old wooden vats and cement with almost no added SO2. The 2020 shows a pretty red\/black color with bright rim. The aromas are quite floral and bright, a pretty melange of boysenberry, black raspberry and tart cherry, very pure with hints of earth and pepper. The palate is supple, sapid and ripe and the tannins are firm. At 13% alcohol, the balance seems perfect. Firm acidity and mineral flavors are mostly hidden under the beautiful melange of ripe red and black fruits. This is a beautiful \"Cuvée Domaine\" that is sensational now, served slightly cool, and that will cellar ten years and more due to the firm acidity. We loved the rather brawny 2019 which needs a few more years to drink at its best - drink the 2020 while you wait but put some away as well. The Convento '16 is a lightly bricking cherry in the glass when the bottle is first opened but fills out into a brilliant, deep, clear red hue after an hour of air. It begins distinctly minty, with raspberry and red plum. A little clove and milled coffee bean waft over a woodsy smell of stripped bark. Over time, sweet orange peel, pungent roses, and candied strawberry appear, adding richness and pleasant aromatic dimension. The palate has a bright, mineral core - but also real juiciness. Flavors of zingy red apple and cranberry begin a little pinched, but quickly fall on the tongue like a wave of healthy fruit. The wine finishes on a serious note, with a hint of menthol and a dash of black tea. Fantastic, semi-chewy Nebbiolo tannin and firm acidity are long lasting. In 2021, the wine is about half\/half Listan Prieto (aka Pais aka Mision aka Criolla) and Listan Blanco. The grapes are co-fermented in an open top vat with 12 days of maceration, and aging for 8 months in used French barrels. As with all \"Chingao\" wines from Envinate, this is bottled without any fining, filtration or sulfur additions. I've always loved how graceful this wine is, but this vintage is possibly the most pretty, floral, bright and Burgundian of any in memory.
