The first thought that popped into my mind upon tasting it was SPICY PALOMA with notes of spice (tajin), smoke (agave), peach and graperuit on a profoundly mineral frame. The characteristic basin shape is responsible for its microclimate and, together with the altitude enables long ripening periods under cool conditions.
