Barbichette 2023 Cache-Cache

Cache-Cache is a lighter side of Cabernet Sauvignon that comes from Seneca Lake, which sees ten days of whole cluster fermentation before aging in a 1500L Foudre. It's a far cry from the big jammy Cabs you might find on a steakhouse menu, instead with the same plum and dark cherry fruit but with a light and juicy body that does well with a chill. There's a bit of earthly funk on the nose that adds character, and great acidity that really brings everything together. A unique and versatile wine that can work alongside anything from smoked fish to rabbit or even a cheese and charcuterie board.
