The deep and delicious 2016 Aupilhac "Monpeyroux" is made from 30% Mourvèdre, 30% Carignan, 25% Syrah, 10% Grenache and 5% Cinsault grown on limestone with clay and limestone scree, certified organic and Biodynamic farming. The wine shows a very dark red/black color with ripe aromas of black raspberry and red currant with earth and spice; the palate is dense and earthy with supple black raspberry and strawberry liqueur nicely balanced with bright citrus hints, powerful yet balanced and fresh. The domaine suggests serving with "game served with a strawberry coulis, spitroast woodcock served on toast coated with its juices." I'm not sure how many of us can pull that off, but a nice steak or a chicken from the greenmarket will do. Lovely wine. David Lillie
