Godmé, Hugues 2009 Champagne Brut 1er Cru Les Alouettes Saint Bets
Hugues Godmé 2009 Les Alouettes Saint Bets Brut is a single vineyard blanc de blancs from Villers-Marmery near the border with Verzy. The soils of this climat are very chalky with little topsoil. The grapes are farmed biodynamically, vinified in neutral oak with native yeasts, with no malolactic fermentation, and bottled with low sulfur. There is an electric sense of chalky minerality to this Champagne. While there is a degree of richness to the wine that hints at Verzy, and a silken quality on the palate derived from its time in wood, ultimately a cool, deft sense of fruit and chalkiness defines the nose and palate. Still a bit taut, there are floral and citrus oil notes on the nose, followed by Meyer lemon and a subtle salinity on the palate. The mousse is fine and the finish long, complex, and supple. This should shine brightly with a bit more time in the bottle. John McIlwain

100% Pinot Noir from a single biodynamically farmedvineyard in Polisot. This rosé spends 48 hours on the skins, is fermented in tank with native yeasts and is bottled without sulfur. Sale price, was $104.99.
Nowack, Flavien NV (Base 17) Champagne Extra Brut S.A.
Flavien Nowack's Extra-Brut S.A. (Sans Année) is comprised of 60% Pinot Meunier and 40% Chardonnay farmed biodynamically in the village of Vandières in the Marne. The base vintage is 2017 with 40% reserve wines dating from 2012. Initial fermentation is with native yeasts and the vins clairs are aged in tank and oak. The nose offers aromas of apple skin, ginger, and wet stone. The palate is medium-bodied and buoyant with stone fruit and spice flavors lent gravitas with a fine bead of pungent minerality. Paillard, Pierre Base XVI Champagne Extra Brut Grand Cru Bouzy Les Terres Rosé
Comprised of 65% Chardonnay and 35% Pinot Noir from the grand cru village of Bouzy on the southern slope of the Montagne de Reims. The 2016 base vintage has a pale salmon robe. Wild cherry, wet stone, sea spray, tangerine peel on nose. The high-toned, crunchy, chalky palate offers flavors of wild strawberry, brioche, and a hint of rosehip. This is a lifted, bright, high-toned rosé (especially from Bouzy) and has more sprightly charm than power, yet boasts a seriously chalky finish and is a pleasure to drink. Fine stuff, indeed! Perseval, Thomas Base 2014 Chamery 1er cru Tradition
From organically grown fruit in the premier cru village in C hamery in northwestern Montagne de Reims, the Perseval Tradition Extra Brut is comprised of 40% Pinot Noir, 40% Pinot Meunier, and 20% Chardonnay from the 2014 vintage. Raised 70% in enamel, and 30% in barrel and disgorged in September of 2020. The nose offers aromas of white flowers, tangerine peel, pear skin, candied ginger, and sea spray. The palate has a punchy mineral attack followed by layered flavors of lady apple, cool crushed herbs, and chalk and displays considerable drive, power, and depth on the persistent salty, dry, savory, lingering finish. I'd love this with a plate of crudo or better still grilled hamachi collar. John McIlwain
Perseval, Thomas 2015 Chamery 1er cru La Pucelle Blanc de Noirs 1.5L
La Pucelle is comprised of 90% Pinot Meunier and 10% Pinot Noir from the bottom of the slope in the eponymous lieu-dit. The vines date from 1961 and are planted in sandy, deep silt soils, which are farmed organically and lightly tilled twice a year, with grass allowed to grow between the vines. The vins clairs are fermented and aged in wood, undergo malolactic fermentation and are bottled unfiltered and unfined.

100% Pinot Noir from sandy loam soils with grass between the vines. Fermented with native yeasts in enamel tanks.
Sélèque, JM NV Base 16 Solessence 7 Villages Rosé Extra Brut disg. 3/19
Comprised of 45% Chardonnay, 40% Pinot Meunier, and 15% Pinot Noir. Organically farmed with biodynamic methods. Disgorged 3/19, 3 grams dosage. The wine has a pale salmon robe, lively bead, and frothy mousse. The nose offers effusive aromas of wild strawberry, green tea, mineral smoke, and cherry stone. The palate is dry and racy with red fruits, apple skin, and a fine, filigreed bead of chalky minerality forming the core within. This has fine lift and cut leading to a penetrating, lingering finish. I'd love to enjoy this with salmon crudo or rare yellowfin tuna, or better yet an assortment of omakase tempura from our friends at Secchu Yokota. John McIlwain Sale price, was $69.99
