Regarding "Natural" wine in the words of Franck Pascal and Isabelle Carle at Le Jonc Blanc:
"It is often said that wine is not a "natural product and that only vinegar is the true outcome of the natural transformation of grapes." It is often said that it is man who “makes” the wine and not nature. Certainly! It must be recognized that for three thousand years man has used his inventiveness to stop the tendency of wine to become vinegar! At all times, we have had to use plants, resins, honey, spices and other empirical recipes to preserve and enjoy the wine as long as possible. Certainly, modern oenology, following Pasteur, made it possible to understand and better control a process that had not been understood until then. But it was at the price of the loss of a part of the magic and poetry."
The wines of Le Jonc Blanc retain the magic and poetry of a natural product, from grapes in certified organic and Biodynamic farming, fermented naturally and vinified and bottled with zero added sulfur. These are pure, vibrant, living wines - not reductive, not high in VA, not full of Brett, nor "mousy," but yes a bit of variation - as Franck says " there must be a little chaos in the wine to vibrate our emotions!" (OK, there is a mousy one but we're not selling it...)
Franck and Isabelle continue...."The Jonc Blanc is first of all a place that gives its name to our wine estate. This name comes from the specific geology of the area: a white limestone plateau where the mother rock outcrops. It is a unique place, a preserved islet, a singular “terroir” characterized by omnipresent limestone, where geography is particularly favorable to the implementation of “sensitive” cultural practices such as Biodynamics. Our parcels of vines are grouped together here, isolated from other crops by steep natural slopes and woods that surround the limestone plateau."
"Specific research into the “terroir” of the region confirms the particularities of the Jonc Blanc domain. There are three types of “terroirs”: the white limestone known as “de Castillon”: a fairly hard white lacustrine limestone which constitutes the main part of the subsoil. The mother rock, very close to the surface, gives shallow soils (rendosols) suitable for vine cultivation. The loose ground is 15 to 25 cm, not more than that! Another part of the soil is also quite shallow, but on a base of limestone with Asteria (yellow Cretaceous limestone) flush with the surface, which is abundantly found in St Emilion. Between the two limestones, there is a small band of “Marnes à Ostréa” which gives the wine iodized characters and an incomparable freshness! These are typically wine-growing soils, which give a lot of minerality to the wines from which they are made. It ranges from freshness in the mouth, to saline mineral tension, and sometimes even a chalky tactile sensation in the mouth!" These are beautiful "wines of nature" and great values as well - we urge you to try them!
Isabelle and Franck Pascal make outstanding and expressive natural wines from their biodynamically farmed vineyards in Bergerac, and this lively sparkling is a great example of their precise, low-intervention winemaking. The 2018 Bulle Rosé is a return to form from Jonc Blanc, after the 2017 showed quite differently due to frost damage in the vineyards that year. This year this delicate pét-nat is made with mostly Cabernet Sauvignon (70%) and a smaller portion of Sémillon (30%), and shows a lovely pink-orange color in the glass. The mousse is very delicate, and on the nose, ripe apple flesh, rose, and crushed strawberries are evident, while citrus, melon, and strawberry come to the fore on the slightly off-dry palate. The delicate bubbles make this an outstanding candidate for before-dinner drinking, or a fun pairing with appetizers or Chinese cuisine. Ben Fletcher
Sauvignon Blanc and Sauvignon Gris from Franck and Isabelle Pascal in Bergerac, Biodynamic farming, vinification without additives, aging for 18 months on the lees in cuve inox. This is a new addition to our Jonc Blanc lineup, and a really lovely, crisp white. Not too tropical, offering melon and stone fruit aromas, with lovely ripe pear on the palate with herbal and mineral flavors in the long finish. This is a fantastic value and a wine of great character that's perfect served with fish in sauce, chicken and mild cheeses! EL
Wow, this a superb natural wine - 100% Gros Manseng grown on a clay/limestone terroir (calcaire de Castillon). Elevage in 1800 liter Stockinger foudre for 18 months, 200 cases produced. This is a more northern version of this grape of southwest France with aromas of exotic fruit, pineapple and herbs. The palate is vibrant with almond, pear and apricot fruit, and finishes with saline minerals. Zero added SO2, 48 btls for the US, enjoy! David Lillie (Last of stock)
The 2017 Jonc Blanc "Fruit" is actually a blend of 2016 reserve Cabernet Sauvignon in foudre with 2017 Malbec and Merlot - a tiny production because of the devastating frost which wiped out most of the 2017 crop. The wine shows ripe cassis aromas with round very pretty berry fruits on the palate. Serve this lovely natural wine a bit cool with cheeses, charcuterie and grilled chicken or pork. Zero added SO2.
Isabelle and Franck Pascal make this beautiful natural wine (formerly known as "Classik") from Cabernet and Merlot grown on their Biodynamic estate near Felines, in Bergerac. The wine is aged sur-lie 12 months in barrel, and is bottled without filtration or added sulfur. The color is a dark red/black; the wine shows bright, vivid aromas of ripe cassis and boysenberry liqueur with earth, musk, violet and graphite. The palate is lush, ripe and vibrant with cassis, prune, chocolate, earth, stone and licorice lifted by firm, cool acidity that continues in the long, bright and sapid finish. Wow, delicious! Serve with grilled pork or beef, a daube Provençal, strong cheeses and charcuterie or cellar for 5 to 8 years.
The 2016 Pure M is a beautiful natural wine with zero added SO2, 100% Malbec grown on "Calcaires a Asteries" typical of the plateau of Saint-Emilion. Two year élevage in 1200 liter Taransaud foudre without fining, filtration or SO2, 1600 bottles produced. The wine shows complex, pure, lush aromas of cassis, blackberry and prune with hints of tobacco, spice and earth. The palate is silky and bright with ripe cassis, blackberry and blueberry fruit backed by refreshing acidity. Mineral and ripe berry fruit flavors linger in the long finish. Serve this cool with any grilled meats, and it's balanced enough for veggies and lighter meat dishes as well. Just delicious and highly recommended! David Lillie (Last of stock)
The superb 2016 Jonc Blanc Pure T is 100% Merlot grown in a terroir of green clay on powdery limestone and fossilized oyster shells, élevage in 1200 liter Taransaud foudre for two years, bottled with no fining or filtration with zero added SO2. Pure Juice. Fabulous balance between richness, concentration and freshness, with the limestone soil bringing saline flavors. The color is a deep black with very floral aromas of cassis and blackberry. The palate is dense, deep and chocolately but still bright and balanced with terrific length. Beautiful wine! David Lillie
