Our friend RS is a very experienced wine taster, so when he makes a report I pay particular attention (he's also not a shy critic, so I don't always get rave reviews from him). Last week he wrote: "Just to let you know, the 1964 Fiore Gattinara Riserva that I started to talk about this morning took a fabulous turn worth describing. To recap, I pulled a firm, snug cork at 5pm yesterday with the hope of bringing it to dinner at 6:30. Initially it looked very promising with good color and aromatics, but seemed a little disjointed on tasting. After a decant to remove copious sediment and an hour of air, little had changed as it still lacked fruit and, while drinkable, did not have the “wow factor” needed for a celebratory meal. So I put it back in the cleaned bottle, and went with plan B.
Tonight [the next day] was a new experience as I found a beautiful balance of complex fruits and resolved tannins, as good as many of the best Nebbiolos I’ve had this year. This was unexpected and worth noting. Thanks for making this possible!"
Take away: Decant! And if you want the best result from old Nebbiolo, decant 6-8 hours before dinner.
