New to the Shelves: Champagne Alizée et Thibaut Tassin

I went to dinner with a friend a few months back and as two wine professionals we asked the sommelier if there were any Champagnes he was excited about, he immedately made us at ease that he was about to guide us well. He very excitedly pointed our attention to a bottle from Thibaut Tassin, and proclaimed that we had to try it as it was practically baby Selosse. Now I am not sure if I would jump to the same conclusion but damn it was still a delicious bottle of wine!
Today we have the Soiree d'Hiver en Pays Aubois from Alizée and Thibaut Tassin, a 100% Pinot Noir sourced from the Les Fioles in Celles sur Ource and Essoyes. It spends 24 months on the lees so no vintage designation, but all the fruit is from the 2022 harvest. The nose has deep concentration with yellow apple, bit of nuttiness and a strong savory, mineral quality. It has a beautiful soft bubble with a lot of texture and complexity. The finish is long and will keep you coming back for more. We have snagged as many bottles as we could, but there is only so much to go around so we have implemented a 3 bottle per person limit.

In 2019 Thibaut's father decided to seperate just 1.25 hectares from the family estate for he and his wife Alizée to farm and make Champagne from. They spent time observing the vines, testing the soil and the surrounding areas before begining the conversion to organic farming, which officially began in 2021, so the 2025 vintage will be the first to have certification. After both Alizée and Thibaut spent time working elsewhere and watching the over-intervention in the winemaking process they knew when it was time to make their own wines they would choose a much different route. They work with breathable containers, and just a few grams of sulphur at harvest, everything is fermented with indigenous yeasts. Wines undergo gentle aging methods with long lees aging in barrel before botting without fining, filtration, or cold stabilization. In 2022 they began a negociant business to increase their production but continue to farm those vines organically just without certification. With such a small vineyard this helps to stabilize their production. The Tassin's are quickly making waves, and I know I am not alone in looking forward to tasting these amazing Champagnes for years to come!
